Seared Wild Salmon with Orange Glaze

Ingredients
For the Salmon:
- 4 wild salmon filets (6 oz each), skin-on or skinless, patted dry
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
For the Orange Glaze:
- 1 cup fresh orange juice (about 2-3 oranges)
- 1 tbsp orange zest
- 2 tbsp honey
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp fresh ginger, grated
- 1 tbsp unsalted butter
For Garnish:
- Fresh mint leaves or lemon balm, finely chopped (about 1-2 tbsp)
- 1 lemon, thinly sliced into rounds
- Optional: a sprinkle of flaky sea salt
Instructions
- Prepare the Orange Glaze:
- In a small saucepan, combine the orange juice, orange zest, honey, soy sauce, and grated ginger.
- Bring the mixture to a simmer over medium heat, stirring occasionally. Let it reduce by about half, until it thickens slightly (about 8-10 minutes).
- Stir in the butter until melted and smooth. Remove from heat and set aside.
- Sear the Salmon:
- Heat a large skillet (preferably cast iron or nonstick) over medium-high heat. Add the olive oil and let it shimmer.
- Season the salmon filets generously with salt and pepper on both sides.
- Place the filets in the hot skillet, skin-side down if applicable. Sear undisturbed for 3-4 minutes, until the skin is crispy and golden (or the bottom is nicely browned if skinless).
- Flip the filets and cook for another 2-3 minutes, until the salmon is just cooked through (internal temperature of 125°F/52°C for medium, or to your desired doneness). Remove from the skillet and set on a plate.
- Assemble the Dish:
- Place the seared salmon filets on individual plates or a serving platter.
- Drizzle each filet generously with the warm orange glaze, letting it pool slightly around the edges.
- Scatter a few thin lemon slices around the salmon for a pop of color and brightness.
- Sprinkle the chopped fresh mint (or lemon balm) over the top for a burst of flavor and aroma. Add a pinch of flaky sea salt if desired.
- Serve:
- Serve immediately with your favorite sides—think roasted asparagus, wild rice, or a light arugula salad to complement the flavors.
Tips:
- For extra visual appeal, reserve a little orange zest to sprinkle on top alongside the herbs.
- If you prefer a thicker glaze, mix 1 tsp cornstarch with 1 tbsp water and stir it into the glaze during the last minute of simmering.
