Applewood smoking has become one of our favorite smoking woods of late. Although we don’t use it on the salmon, applewood imparts a slightly semi-sweet apple-like flavor into the smoke. Applewood is best know for giving an amazing flavor to meats, especially pork. We started off the day firing up the smoker and thought that our Alderwood turned out so good, lets try smoking some salt with applewood.
What we got out was an amazing smoke on the natural sea salt we used. The applewood smoke flavor is truly unique because of the slight sugars it imparts onto the food giving it the most incredibly sweet and savory profile. Now take that sweet/savory flavor and add the saltiness of the natural sea salt
